Kithul (Caryota urens) mostly grows in Sri Lanka’s rain forest expanse. treacle is made from sap extracted from the inflorescence of the kithul palm and boiled down to a sweet, dark brown syrup, thick and sweet in flavor. The taste, texture and color may vary depend on the age of the tree and the region. For generations, Kithul was native sugar for the islanders. The Kithul treacle was used regularly to make various traditional sweets, drinks such as herbal infusions. Kithul has a much lower calorie content and a high nutritional content. It is a common ingredient in Ayurvedic medicine and a good alternative sweetener for diabetics. Kithul also contains many essential vitamins and minerals.
